Avocado Spinach Pasta

A perfect dinner for the avocado lovers like me! You can see by the color of this pasta that is healthy! And really easy to make, only 3 steps you need to take!

Equipment

  • Blender or hand blender
  • Frying pan
  • Cooking pan

ingredients
  

  • 150 g pasta
  • 100 g spinach
  • 1 avocado
  • 1 tsp lemon juice
  • 1 clove garlic
  • 1 hand grated cheese
  • 50 ml milk (add more depending on the texture)
  • 300 g chicken fillet

instructions
 

  • Mix the spinach, avocado, lemon juice, garlic and a handful of grated cheese until smooth in a blender or with a hand blender. Add milk to make it thinner.
  • Cook the pasta. Meanwhile, fry the chicken until done.
  • Add the spinach/avocado mix to the chicken and fry for 2 min.

notes

Vegan: replace the milk with soy or almond milk and remove the chicken fillet. 
Seasoning: salt, black pepper and onion powder.
