Sticky Crispy Chicken
There is nothing better than a crispy chicken with a sweet caramelized sauce! The sauce has an umami flavor with a sweet twist.
Whilst heating the oil, beat the egg in a bowl and the cornflour and flour (with seasoning mixed) in two other bowls.
Dredge the chicken in the cornflour, then dip in the egg (cover all the chicken in egg wash), and finally dredge it in the seasoned flour.
Cook on a high heat for 6-7 minutes, turning 2-3 times, until well browned. Place in a bowl lined with kitchen towels.
Add all of the sauce ingredients to the hot wok, stir and bubble on a high heat until the sauce reduces by about a third (should take 2-3 minutes).
Meantime, cook the rice and cut the broccoli and red bell pepper.
Add the chicken, broccoli and red bell pepper in and toss in the sauce to coat. Cook for 1-2 minutes.
Top it off with some sesame seeds and spring onions.
